The fails of sourdough

Sourdough is such a finicky thing.

It’s a huge learning curve. Right when I think my dough is doing well and the future looks promising…. I am shown I’m wrong.

Sourdough is all about timing, stretches and folds. Every 30 minutes, you have to perform yoga moves to your dough. To strengthen its core… I mean to activate and strengthen the gluten network…

This bread only had 3 stretching and folding sessions. Doesn’t look the worst but it shouldn’t have flattened out like a pancake
This one had about 7-8 stretches. Better but still not my ideal.

I tell you what. This sourdough sh*t is hard. But I’m patient. I will master it soon enough and find a system that gets me good reliable bread each time.….. someday

All the loafs I made have tasted great. I’m getting there…. Slowly but surly.

There are so many different factors with sourdough. Your starter has to be strong and active, you have to do stretches and folds and bulk rises and final/ proof rise. Different flours can affect your bread and too much whole wheat can have an effect on your bread too.

Its all very time consuming.

But it’s fun!
