Sushi Night in Boulder

I have been trying to have sushi night for the last couple of nights but it hasn’t happened. Finding sushi stuff isn’t as straight forward as it may seem. I had the most trouble trying to find fresh salmon. I spent multiple days tracking down some but fresh salmon is a delicacy in Boulder. I need to find a food market… If I were in Melbourne, I could find it in seconds. However, in CO, during this COVID fiasco, it is pretty hard to find an item like that; sushi rolls were a hard find as well. I am glad they are opening things back up. It will make my life a lot easier.

Me and few friends, went to Bettasso’s Farm to watch the sunset and it was awesome as usual. I brought two blankets, some wine, and a candle. No I did not bring a sound system… it is one of the many things on the list. We made due though. We watched the clouds roll by as the sun set slowly to the west. I could have stayed there all night.

With that being said, Misty, my roommate, said she wanted to go back to the car to grab some food and leave. I told her I would meet her back there in 10 minutes, after a heated debate. Those 10 minutes were worth the debate. The clouds were so beautiful, I swear the sky in Colorado is so much bluer (if thats a word) than anywhere I have ever been.

After the sunset, we headed to the grocery store to get sushi wraps. Wait I had two opportunities to get sushi wraps but didn’t… ya I know. I blew it. We went to the store and Shannon navigated the store like a pro. She was in and out in 5 minutes. She killed it. We went to the house and put the rice on, it was go time. We cut and prepped cucumbers, carrots, avocados, and tofo. By the time the rice was done we were ready. Shannon and Misty were sushi novices but they performed. I was a bit rusty but I wrap a pretty mean sushi. Issue: we didn’t have a sharp knife to cut the sushi rolls… This is actually a pretty huge issue. Every kitchen needs a sharp knife. Again add it to the Things Tony needs to live list… The kitchen was in absolute shambles. Bits and pieces of every item we used were everywhere. Misty went to sleep so Me and Shannon were blessed with the sushi clean up, we did a little bit of work and quit, (future us took care of it). There was still some wine left so me and Shannon went out on the deck and stared out at the sky again. We talked about some interest topics and then called it a night. We conquered sushi night, 6/10 rating, room for improvement but we got the job done.

I think Colorado is just perfect for me, I know it is early but I love it here. If I do not end up living here, I will live somewhere very similar. The fact that I can go to the grocery store for some beers and look out at the mountains makes me so happy. I love it so much.
